Course Aim & ObjectivesTo equip food handlers of both retail and non-retail food establishments with the knowledge and skills to follow food safety and hygiene policies and procedures as well as inculcate the rationale of some of the practices into food handlers for better understanding and assisted policing in the licensed food premises
Upon completion of the course, candidates will be able to:
Sources of food contamination
Microorganism associated with food borne illness
Prevent food contamination – 5 Key Food Hygiene Principless
Conduct Food Safety and hygiene checks
Target AudienceAny person who handles and prepares food and beverage in SFA-licensed food establishment i.e. Kitchen Managers, Supervisors, Chefs, Sous Chefs, Cooks, Kitchen Assistants, Food Stall Assistants and all food and beverage handlers.
Teacher to Student RatioTo ensure that all students have sufficient time to learn and practice their skills, we have allocated 1 teacher per 20 students maximum. (1:20)
Duration and Language MediumThe duration of this course will be held for 7.5 Hours (9.00am – 5.30pm). Comprises of 6 hours training and 1.5 hours assessment.

AssessmentAt the end of the course, participants will be required to undergo an assessment which comprises practical performance (PP), multiple choice questioning (MCQ), and written assessment (WA).
